Vinification and ageing
After a careful selection in the vineyard during the harvest done exclusively by hand, the grapes are taken to the cellar in small boxes. The vinification protocol provides for a fermentation with a minimum of 50% of the whole bunch in stainless steel tanks at a controlled temperature. Almost at the end of the alcoholic fermentation, it is drawn off and pressed to finish the fermentation. The refinement of about 24 months is carried out in non-new 500-liter tonneaux and large barrels and a further 6 months in the bottle.
Tasting notes
Ruby red, deep but brilliant, the nose is intense, with red fruits and spices, with mineral notes and well-toasted and balanced wood. On the palate you immediately notice its beautiful structure, harmonic, almost sweet, with good fruit, very persistent.
